Cheesy Baked Eggs in Avocado

  • Large ripe avocados2
  • Large eggs4
  • Cheddar cheese, shredded30 g
  • SaltPinch
  • Black pepper, freshly groundPinch
  • Chives, fresh, chopped (for garnish)1 tbsp

Method

    Preheat your oven to 200°C (400°F).

    Cut each avocado in half lengthwise and carefully remove the pits. Scoop out about 1 tbsp of avocado flesh from each half to make a larger well for the egg.

    Crack one egg into each avocado half. If any egg white spills over, don't worry.
