- Cheddar cheese, shredded30 g

Preheat your oven to 200°C (400°F).

Cut each avocado in half lengthwise and carefully remove the pits. Scoop out about 1 tbsp of avocado flesh from each half to make a larger well for the egg.

Crack one egg into each avocado half. If any egg white spills over, don't worry.

Sprinkle each egg with salt, pepper, and shredded cheddar cheese.

Place the avocado halves on a baking tray and bake for 12-15 minutes, or until the egg whites are set and yolks are to your desired consistency.

Carefully remove from the oven, garnish with fresh chives, and serve warm.
