Creamy Coconut & Berry Parfait

Ingredients

  • Skyr or Greek yoghurt, plain, full-fat150 g
  • Unsweetened shredded coconut1 tbsp
  • Chia seeds1 tbsp
  • Mixed berries (fresh or frozen, thawed)75 g
  • Vanilla protein powder (unflavoured or vanilla)1 scoop (approx 25g)
  • Almond milk (unsweetened)30 ml

Method

    In a small bowl, combine Skyr/Greek yoghurt, protein powder, and almond milk. Mix until smooth and creamy.

    Gently fold in shredded coconut and chia seeds.

    In a glass or small bowl, layer half of the berry mixture, then half of the yoghurt mixture.

    Repeat with remaining berries and yoghurt mixture.
