- Halloumi cheese, sliced250 g
- Courgettes, chopped2 medium
- Bell peppers (mixed colours), chopped2 medium
- Cherry tomatoes200 g
- Red onion, cut into wedges1 medium
- Kalamata olives50 g
- Olive oil2 tbsp
- Dried oregano1 tsp
- Garlic granules (or 2 cloves minced fresh)0.5 tsp

- Black pepper0.25 tsp
- Fresh parsley, chopped (for garnish)1 tbsp

Preheat oven to 200°C (180°C fan).

On a large baking tray, combine courgettes, bell peppers, cherry tomatoes, and red onion. Drizzle with 1 tablespoon of olive oil, oregano, garlic granules, salt, and pepper. Toss to coat.

Roast for 15 minutes.

Remove the tray from the oven. Arrange sliced halloumi and olives among the roasted vegetables.

Drizzle remaining 1 tablespoon of olive oil over the halloumi and vegetables. Return to the oven and bake for another 15 minutes, or until the halloumi is golden and vegetables are tender.
