Method

Whisk eggs and egg whites in a bowl with a pinch of salt and pepper.

Heat olive oil in a non-stick frying pan over medium heat.

Add spinach and cherry tomatoes, cooking until spinach wilts (about 2-3 minutes).

Pour in the egg mixture and gently scramble, stirring occasionally, until cooked to your desired consistency.

Stir in crumbled feta cheese just before serving.
