Ingredients

  • Ricotta cheese (part-skim)100 g
  • Large egg1
  • Wholemeal flour30 g
  • Fortified milk (dairy or plant-based)50 ml
  • Fresh spinach, finely chopped50 g
  • Chives, chopped1 tbsp
  • Baking powder1/2 tsp
  • Olive oil (for cooking)1 tsp
  • Greek yoghurt (0% fat, for topping)50 g
  • Smoked salmon or grilled halloumi (optional, for extra protein)50 g

Method

    In a bowl, whisk together ricotta cheese, egg, and milk until smooth.

    Add wholemeal flour, baking powder, chopped spinach, and chives to the wet ingredients. Mix until just combined (don't overmix).
