Ingredients
- Raw king prawns, peeled and deveined250 g
- Broccoli florets200 g
- Brown rice noodles or wholewheat noodles150 g
- Soy sauce (low sodium)2 tbsp
- Sesame oil1 tsp
- Rice vinegar1 tbsp
- Honey or maple syrup1 tsp
- Garlic, minced2 cloves
- Ginger, fresh, grated1 tsp
- Olive oil or sesame oil1 tbsp
- Spring onions, sliced (for garnish)2
- Sesame seeds (for garnish)1 tsp

Cook noodles according to package instructions. Drain and set aside.

In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey/maple syrup, garlic, and ginger to make the sauce.

Heat 1 tbsp olive/sesame oil in a large wok or frying pan over high heat.

Add broccoli florets and stir-fry for 3-4 minutes until tender-crisp.

Add prawns to the wok and stir-fry for 2-3 minutes until pink and cooked through.

Pour the sauce over the prawns and broccoli, tossing to coat. Cook for 1 minute until sauce thickens slightly.

Add cooked noodles to the wok and toss everything together until well combined.

Serve immediately, garnished with sliced spring onions and sesame seeds.
