Turkey Meatloaf Muffins with Sweet Glaze

These individual meatloaf muffins are a delicious and portion-controlled way to enjoy a classic comfort meal. Lean turkey and a fibre-rich glaze make them a great source of protein and sustained energy, perfect for meal prepping.

Ingredients

  • Lean turkey mince500 g
  • Rolled oats60 g
  • Egg, large1
  • Onion, finely chopped0.5 medium
  • Worcestershire sauce1 tbsp
  • Garlic powder1 tsp
  • Dried parsley1 tsp
  • Salt0.5 tsp
  • Black pepper0.25 tsp
  • Ketchup3 tbsp
  • Brown sugar or maple syrup1 tbsp
  • Dijon mustard1 tsp

Method

    Preheat oven to 190°C (170°C fan). Lightly grease a 12-cup muffin tin.

    In a large bowl, combine turkey mince, rolled oats, egg, chopped onion, Worcestershire sauce, garlic powder, dried parsley, salt, and pepper. Mix until just combined (don't overmix).

    Divide the mixture evenly among the 12 muffin cups, pressing gently.

    In a small bowl, whisk together ketchup, brown sugar/maple syrup, and Dijon mustard for the glaze.

    Spoon a small amount of the glaze over the top of each meatloaf muffin.

    Bake for 20-25 minutes, or until cooked through and the internal temperature reaches 74°C (165°F).

    Let sit in the muffin tin for a few minutes before removing. Serve with steamed greens or a side salad.
